Ken’s Rice Pilaf
| Ingredients 2 tablespoons - butter 1/3 cup – finely chopped onions 2 – cloves finely chopped garlic 1 cup – long-grain white rice 2 cups – chicken broth (or other combined liquids) 1/2 teaspoon – kosher salt Other flavors or spices - sprigs fresh thyme, bay leaf, mushrooms (chopped fine), dill, old bay Directions In
2 tablespoons of butter sweat onions and garlic in a heavy 3 quart
sauce pan, over medium-low/medium heat until soft but not brown.
Options – add bell pepper, ginger, mushrooms. Stir in and cook 1 cup rice for 1 minute. Options – add thyme, bay leaf, old bay. Pour
in 2 cups of chicken broth, ˝ teaspoon salt and boil uncovered over
high heat until the level of liquid is just above the level of the rice
and you can see air holes forming in the rice, about 5 minutes. Cover, reduce the heat to low and simmer for exactly 15 minutes WITHOUT LIFTING THE LID. Let rest covered off the heat for 5 minutes. Fluff with fork and season to taste. Bon Appétit!!
